Cooking Instructions

Stovetop Method:

  2. Soak overnight (8-12 hours) in cold water for best results
  3. Drain, add fresh water (3 cups per 1 cup beans)
  4. Bring to boil, then simmer 45-60 minutes until tender
  5. Add salt only in the last 10 minutes of cooking

Quick Soak Method: Boil beans for 2 minutes, remove from heat, cover and let stand 1 hour. Drain and proceed with regular cooking.

Pressure Cooker: 20-25 minutes at high pressure (after soaking)

Chef’s Tip: Don’t skip the soaking—it reduces cooking time and makes beans more digestible. For extra flavor, add onions, garlic, or bay leaves to your cooking water. Save the cooking liquid (aquafaba)—it’s fantastic for thickening stews or even making vegan meringues!

Why Soak? Soaking reduces cooking time, improves digestibility, and helps beans cook more evenly. Your patience will be rewarded with perfectly tender, creamy beans.

Recipe Inspiration: Try making traditional Cameroonian koki by blending soaked beans with palm oil, hot pepper, and seasonings, then steaming in banana leaves. It’s comfort food at its finest.
